Cheesy Shrimp And Grits Casserole
- 4 cups chicken broth
- 1/2 tsp. salt
- 1 cup regular grits
- 1 cup shredded cheddar, sharp
- 1 cup Monterey Jack with peppers
- 2 Tbsp. butter or margarine
- 6 green onions, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced
- 1 pound fresh shrimp, peeled and cooked
- 1 can diced tomatoes and green chilies, drained
- 1/4 tsp. salt
- 1/4 tsp. pepper
- Bring broth and 1/2 tsp. salt to a boil in a large saucepan and stir in grits.
- Cover and reduce heat and simmer for 20 minutes.
- Stir together grits, 3/4 cup cheddar and all of Monterey Jack cheese.
- Melt butter in a large skillet and add green peppers, onion and garlic and saute for 5 minutes.
- Stir together onion mixture, grits mixture, shrimp and next three ingredients. Pour into a lightly greased 2 quart baking dish and sprinkle with remaining cheddar.
- Bake at 350 degrees for 30 -45 minutes.
