Cheesy Shrimp And Grits Casserole

  1. Bring broth and 1/2 tsp. salt to a boil in a large saucepan and stir in grits.
  2. Cover and reduce heat and simmer for 20 minutes.
  3. Stir together grits, 3/4 cup cheddar and all of Monterey Jack cheese.
  4. Melt butter in a large skillet and add green peppers, onion and garlic and saute for 5 minutes.
  5. Stir together onion mixture, grits mixture, shrimp and next three ingredients. Pour into a lightly greased 2 quart baking dish and sprinkle with remaining cheddar.
  6. Bake at 350 degrees for 30 -45 minutes.
