Low Calorie Beef Ale Casserole
- 1 tbsp oil
- 2 medium onions chopped
- 1 kg braising beef cubed
- 1 salt pepper to taste
- 500 ml dark ale (beer)
- 250 ml beef stock made with stock cube
- 2 tbsp tomato paste
- 1 mixed herbs to taste
- 6 carrots chopped
- 2 parsnips or any other root veg you want
- 1 bay leaf
- 1 small amount of sugar to taste
- 10 mushrooms chopped up
- Chop cook onions in little oil add to casserole dish
- Cube and brown beef in same dish as onions season with salt and pepper
- Add all the other ingredients to casserole pot and cook low for three to four hours till thick and nice
- Enjoy with mash or roasted potatoes
- Can be cooked in slow cooker or oven or on stove top
