Mash Potato Puffs
- 2 Eggs
- 1/3 cup Sour cream
- 1 1/4 cup Cheddar cheese shredded
- 2 tbsp Parmesan cheese
- 2 tbsp Onion chives or onions
- 1 Salt-and-pepper to taste
- 3 cup Cold mashed potatoes
- 1/4 cup Bacon crumble
- Preheat oven to 400F.
- Butter muffin cake Wells.
- And medium mixing bowl whisk eggs then whisk in sour cream, mix and both cheese and onion chives.
- Season potatoes with salt and pepper.
- Add the potatoes to the egg mixture.
- Spoon into muffin tin just below the top of the well.
- Bake for 25 to 35 minutes until they pull away from the sides of the cup and are golden brown.
- Remove and let cool for five minutes.
