World's best tortilla soup...seriously I shouldn't even share it
- 4 tbsp olive oil
- 1 medium sweet onion (vidalia) chopped
- 8 clove garlic, minced
- 3 can green chilie
- 3 cup cooked, diced chicken
- 1 1/2 gallon chicken broth ( it's soup the exact amount isn't critical)
- 8 roma tomatoes, diced
- 2 can sweet corn (drained)
- 1 bunch cilantro
- 1/2 tsp ground cumin
- 1 diced avacado
- 1 sour cream
- 1 tortilla chips
- 1 monterey jack cheese
- 1 lime wedges
- Simmer first four ingredients over medium-low heat for a few minutes until onions are translucent.
- (Fresh green chilies are amazing but often add too much heat so be careful that they are mild if you use fresh.)
- Add chicken, chicken broth, chopped tomatoes, and canned corn.
- ( this is the only thing I use canned corn for, you can use fresh or frozen but canned corn is sweeter so it is recommended)
- Cover and Simmer for 30 minutes
- Add cilantro and cumin.
- Simmer for 10 more minutes.
- Place a handful of chips in a bowl, top with perhaps a couple tablespoons of cheese, and ladle soup over chips.
- ( I eat mine without cheese to cut calories, but the cheese makes it simply decadent)
- Garnish with avocado and/or sour cream if desired.
- Add lime wedge and serve.
- Every ingredient is crucial.
- If you don't like cilantro make a different recipe.
- I have never modified this recipe; it is simply too perfect as is.
