Sweet Potato Pie
- 2 cup mashed sweet potatoes
- 1/4 lb butter
- 1 cup brown sugar
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup evaporated milk
- 1/4 cup sugar
- 1 9 in. frozen pie crust
- 2 eggs separated
- Preheat oven to 375F
- Bake sweet potato(es) until completely tender in foil.
- Can take up to an hour.
- Change oven to 400F
- Mix sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk.
- Mix well.
- Beat egg whites until stiff peaks form, mix in 1/4 cup of sugar.
- Add to sweet potato mixture.
- Put mixture into pie crust and bake at 400F for 10 minutes and then reduce heat to 350F until firm and toothpick or knife comes out clean.
