Grandma O's Broccoli Chicken Casserole

  1. Cook rice.
  2. Cook chicken breasts and shread into bite-sized chuncks.
  3. Saute onions in butter until soft.
  4. Add sour cream and soup.
  5. Add salt pepper and garlic powder.
  6. Precook broccoli for a minute or two in the microwave to soften in up, but don't cook it all the way.
  7. Combine sauce in large bowl with broccoli, chicken and cooked rice.
  8. Mix in 1 cup of crushed potato chips.
  9. Transfer misture to a buttered 9x13 casserole dish.
  10. Bake for 30 minutes at 375 degrees.
  11. Pull casserole out and sprinkle with remaining potato chips and cheddar cheese.
  12. Bake for another 5-10 minutes until cheese is melted.
  13. Let stand 5 minutes before serving.
