Sausage Stuffed Mini Peppers

  1. Brown sausage in skillet.
  2. Remove to a paper towel lined plate.
  3. While the sausage is cooking, prepare stuffing mix according to the package directions.
  4. Place halved peppers on a baking sheet and preheat the broiler to high.
  5. Stir together stuffing mix and sausage.
  6. Scoop 1 Tablespoon of this mixture into each pepper half.
  7. Press down gently with your finger to fill pepper.
  8. Sprinkle each filled pepper half with 2 teaspoons of cheese.
  9. Broil until cheese is melted and bubbly.
  10. Serve immediately.
