Cheesy Rotel Crayfish Spaghetti
- 8 to 12 oz. angel hair spaghetti
- 1/2 pkg. frozen onion mix
- 1 tsp. minced garlic
- 1 Tbsp. light margarine
- 1/4 lb. light Velveeta, cubed
- 1 lb. crayfish tails
- 1 can cream mushroom soup
- 1 can Ro-Tel tomatoes
- 1/2 c. skim evaporated milk
- 1 1/2 tsp. lemon juice
- 1/4 tsp. red pepper
- 1 tsp. salt
- 1/4 tsp. pepper
- Cook spaghetti, according to package directions and drain. Saute vegetables in margarine until tender-crisp.
- Stir in mushroom soup, tomatoes, skim milk, lemon juice and seasonings.
- Mix well. Add Velveeta and simmer until melted, stirring often.
- Add crayfish and simmer about 10 to 15 minutes.
- Add spaghetti and stir in gently until well blended.
- Serves 6.
