Dutch Apple Pancakes

  1. Crepes: In an electric mixer mix together flour, milk, eggs, apple juice, sugar, beat until smooth.
  2. Add apple.
  3. In a hot, non-stick, crepe pan heat 1 teaspoon butter or vegetable oil.
  4. Pour about 2 tablespoons batter into pan, spread batter evenly to cover entire surface.
  5. Cook until it browns around the edges, about 30 seconds.
  6. Flip it over with a spatula (or fingers) and cook until it starts to brown, another 30 seconds.
  7. Slide the crepe onto a plate and continue until all batter is used.
  8. Set aside.
  9. Filling: Peel, core and dice apples.
  10. Gently simmer apples, raisins, honey, cinnamon and apple juice until apples are soft but not mushy.
  11. Using a potato masher break up the apple mixture to make the apple pieces smaller.
  12. Spoon some sauce on a crepe and fold twice Dust with powdered sugar.
  13. Serve.
