Carrot Cake

  1. Preheat oven to 350u0b0.
  2. Grease and flour two 8-inch round pans. Beat sugar with oil.
  3. Add eggs, one at a time, beating well. Sift flour with baking powder, soda, cinnamon and salt.
  4. Beat into sugar mixture.
  5. Beat in vanilla, carrots, pineapple, walnuts and raisins.
  6. Pour into prepared pans.
  7. Bake 35 to 45 minutes until cake tests done.
  8. Cool 10 minutes in pans.
  9. Turn out on wire racks.
  10. Spread with favorite frosting when cool.
