Vietnamese Beef Soup

  1. Bring the broth to a boil in a large pot.
  2. Add the noodles and simmer until just tender, 4 to 5 minutes.
  3. Remove from heat and stir in the spinach, basil.
  4. Divide the roast beef among bowls and ladle the soup over the top.
  5. Sprinkle with the scallions and drizzle with the chili sauce (if using).
  6. Serve with the lime wedges, if desired.
