Alan'S Chicken
- 4 chicken breast, flattened
- 1/2 c. milk
- dash of tabasco
- 1/2 c. flour
- 2 Tbsp. olive oil, divided
- 2 Tbsp. butter, divided
- 2 leeks (white part only, chopped)
- 1/4 c. parsley
- 1 tsp. fresh rosemary, minced
- 1/3 c. white wine (may substitute chicken broth)
- 1 tsp. brown mustard
- juice of one lemon
- Combine tabasco and milk.
- Dip chicken breast in milk mixture then dredge in flour.
- Saute in 1 tablespoon of olive oil and 1 tablespoon butter, for 3 minutes on each side.
- Place in baking dish and bake at 350u0b0 for 10 minutes.
- Add 1 tablespoon olive oil to skillet and saute leeks.
- Add remaining ingredients and pour over chicken breast.
- Serve with pasta or rice.
