Our Family's Potato Salad

  1. Peel the potatoes and cut into about 8 pieces, and place in a bowl of water.
  2. Drain off the water, put the potatoes into a heatproof container and cover loosely with plastic wrap.
  3. Microwave for 3 minutes or so at 500 W. Mash while still hot and leave to cool.
  4. Slice the cucumber very thinly, sprinkle with a little salt and massage, and squeeze them out well to get rid of any excess moisture.
  5. Boil the sausage and slice into rounds.
  6. Defrost the corn - it's easy if you just add it to the boiling water after taking out the sausage.
  7. Drain well.
  8. Mix the ingredients together in a bowl very well (See Step 7).
  9. When the ingredients from Steps 1 and 2 have cooled down to room temperature, mix with the combined ingredients from Step 3, and adjust the seasoning with salt and pepper.
  10. Since you don't put salt in the potato mixture, you'll need to add a bit more salt at this stage.
  11. Plate, sprinkle with chopped parsley if available, and it's done.
  12. Soak the onions in water for at least a few minutes to get rid of the harsh flavor, and drain very well.
  13. You can skip this step if you're using new sweet onions.
