Our Family's Potato Salad
- 1 medium Potato
- 1/2 of a small thin one Cucumber
- 1 Wiener sausage
- 2 tbsp Corn (frozen)
- 1 1/2 tbsp Mayonnaise
- 2 tablespoons, finely minced Onion
- 2 tsp Condensed milk
- 1 tsp Milk
- 1/2 tsp Kombu tea granules
- 1 dash Salt and pepper
- Peel the potatoes and cut into about 8 pieces, and place in a bowl of water.
- Drain off the water, put the potatoes into a heatproof container and cover loosely with plastic wrap.
- Microwave for 3 minutes or so at 500 W. Mash while still hot and leave to cool.
- Slice the cucumber very thinly, sprinkle with a little salt and massage, and squeeze them out well to get rid of any excess moisture.
- Boil the sausage and slice into rounds.
- Defrost the corn - it's easy if you just add it to the boiling water after taking out the sausage.
- Drain well.
- Mix the ingredients together in a bowl very well (See Step 7).
- When the ingredients from Steps 1 and 2 have cooled down to room temperature, mix with the combined ingredients from Step 3, and adjust the seasoning with salt and pepper.
- Since you don't put salt in the potato mixture, you'll need to add a bit more salt at this stage.
- Plate, sprinkle with chopped parsley if available, and it's done.
- Soak the onions in water for at least a few minutes to get rid of the harsh flavor, and drain very well.
- You can skip this step if you're using new sweet onions.
