Orange Rice
- 1 teaspoon grated orange zest
- 1 1/2 cups orange juice
- 1 tablespoon butter
- 1 1/2 cups instant rice
- 1 (11 ounce) can mandarin orange segments, drained
- In a saucepan over medium-high heat, combine the orange zest, orange juice, and butter.
- Bring to a boil, and stir in rice.
- Cover, and remove from heat.
- Let stand 5 minutes.
- Mix in mandarin orange segments, and serve immediately.
