Mille-Feuille Tonkatsu with Sesame Miso Sauce
- 18 slice Thinly sliced pork loin
- 1 Salt and pepper
- 1 Plain flour
- 1 dash Eggs
- 1 Panko
- 2 tbsp Ground sesame seeds
- 1 1/2 tbsp Sugar
- 1 tbsp Miso
- 1 tbsp Mayonnaise
- 1 tbsp Ketchup
- 3 tbsp Japanese Worcestershire-style Sauce
- 1/2 tsp Soy sauce
- 1/2 tsp Tubed garlic (as desired)
- Spread out the meat, and stack together.
- Once you have stacked 6 slices per serving, sprinkle the back with salt and pepper, and rub it in by hand.
- It will stick together even when stacked this thick, so there's no need to worry.
- Thoroughly coat the meat with flour, eggs, and panko in that order.
- Make sure to coat the edges as well.
- Fry them up until golden brown in 340F/170C oil, and they are done.
- Place the sesame-miso sauce into a microwave-safe container, mix, and microwave at 600 W for 20 seconds.
- Take it out, mix it again, repeat 3 times, and it is done.
- The miso will thicken if you over-microwave the sauce, so be careful.
- You can reduce the amount of sugar for those of you that prefer a more moderate sweetness.
