Mille-Feuille Tonkatsu with Sesame Miso Sauce

  1. Spread out the meat, and stack together.
  2. Once you have stacked 6 slices per serving, sprinkle the back with salt and pepper, and rub it in by hand.
  3. It will stick together even when stacked this thick, so there's no need to worry.
  4. Thoroughly coat the meat with flour, eggs, and panko in that order.
  5. Make sure to coat the edges as well.
  6. Fry them up until golden brown in 340F/170C oil, and they are done.
  7. Place the sesame-miso sauce into a microwave-safe container, mix, and microwave at 600 W for 20 seconds.
  8. Take it out, mix it again, repeat 3 times, and it is done.
  9. The miso will thicken if you over-microwave the sauce, so be careful.
  10. You can reduce the amount of sugar for those of you that prefer a more moderate sweetness.
