Oriental Chicken
- 2 whole chicken breasts
- 2 Tbsp. vegetable oil
- 1 medium green pepper, cut in strips
- 1 small onion, sliced thin
- 1 (5 oz.) can sliced water chestnuts, drained
- 1/2 c. water
- 1 c. sliced celery
- 1 tsp. salt
- 1/2 tsp. ground ginger
- 4 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 (16 oz.) can bean sprouts
- 1 (3 oz.) can chow mein noodles
- Cut chicken into thin strips.
- Heat oil in a large skillet. Add chicken and cook over moderate heat until meat turns white (approximately 5 minutes).
- Add pepper, onion, celery, chestnuts, water, salt and ginger.
- Cover and cook for 5 minutes.
- Blend cornstarch and soy sauce together.
- Stir into chicken.
- Add bean sprouts and cook about 2 minutes or until thickened.
- Stir often. Serves 4.
