Zucchini Chocolate Cake
- 2 1/2 c. sifted flour
- 1/4 c. baking cocoa
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 c. butter
- 1/2 c. oil
- 2 c. grated zucchini
- 6 oz. semi-sweet chocolate chips
- 1 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. buttermilk
- 3/4 c. chopped nuts
- Sift flour, cocoa, baking soda and salt and set aside.
- Cream butter, oil and sugar in mixing bowl until light and fluffy, using electric beater at medium speed.
- Beat eggs in one at a time. Blend in vanilla and dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition.
- Stir in zucchini.
- Pour in a 13 x 9-inch pan.
- Sprinkle with chips and nuts.
- Bake at 325u0b0 for 55 minutes.
