Meatball Stew
- 1 egg
- 1/2 c. fresh bread crumbs (1-1 1/2 slices of bread)
- 1 medium onion, finely chopped
- 1 lg. clove garlic, finely chopped
- 1 1/2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. extra-lean ground beef
- 1 tsp. vegetable oil
- 1 c. sliced celery
- 1 Tbsp. cornstarch
- 1 can (13 3/4 oz.) no-salt-added tomato sauce
- 2 c. frozen small whole onions
- 1 pkg. (10 oz.) frozen whole baby carrots
- 1 can (16 ozs.) whole new potatoes, drained
- Beat egg slightly in large bowl.
- Add crumbs, onion, garlic, 3/4 tsp. Italian seasoning, salt and 1/8 tsp.
- pepper.
- Mix in meat.
- Shape into 24 one inch meatballs.
