Zucchini Scramble

  1. In a skillet, saute zucchini and onion in butter until tender.
  2. Season with salt and pepper.
  3. Add the eggs; cook and stir until set.
  4. Sprinkle with cheese.
  5. Remove from heat; cover until cheese melts.
  6. Serve with tomato wedges, if desired.
