Orange Spinach Salmon Salad

  1. Combine spinach, oranges and salmon in a large bowl.
  2. Mix orange juice concentrate, olive oil and mint in a small bowl.
  3. Season as desired with your favorite salt-free seasoning.
  4. Drizzle over salad and toss.
  5. Divide evenly between 4 plates.
  6. Arrange 1/4 of the onion on top of each salad.
  7. Enjoy with 2 breadsticks per salad.
  8. Complement meal with 1/4 cup frozen yogurt and 1/2 cup blueberries per person.
  9. Serve each person an 8 fl oz glass of water with the meal.
