Orange Spinach Salmon Salad
- 6 cups spinach leaves
- 2 cups canned mandarin oranges (in juice)
- 16 oz. no salt added canned salmon
- 1/4 cup frozen orange juice concentrate
- 1 Tbsp. extra virgin olive oil
- 1 tsp. dried mint flakes
- 1 medium red onion, sliced and separated into rings
- 8 sesame breadsticks
- 1 cup low-fat frozen yogurt
- 2 cups fresh or frozen blueberries
- 32 fl oz (4 cups) drinking water
- Combine spinach, oranges and salmon in a large bowl.
- Mix orange juice concentrate, olive oil and mint in a small bowl.
- Season as desired with your favorite salt-free seasoning.
- Drizzle over salad and toss.
- Divide evenly between 4 plates.
- Arrange 1/4 of the onion on top of each salad.
- Enjoy with 2 breadsticks per salad.
- Complement meal with 1/4 cup frozen yogurt and 1/2 cup blueberries per person.
- Serve each person an 8 fl oz glass of water with the meal.
