*ari*/sig Zucchini Fritters with Yogurt Dip
- 5 large Zucchini ,grated
- 1 medium white or yellow onion
- 1/2 cup (75g) plain flour
- 3 eggs
- 1 tbsp each off chopped fresh oregano,chopped fresh basil and chopped fresh parsley
- 1 pinch salt and pepper to taste
- 1 small amount of oil for frying
- 1 yogurt dip as follows
- 3/4 cup (180ml) plain Greek yogurt (thick set yogurt)
- 1 small cucumber, seeded, grated and drained.
- 1 large clove garlic, crushed
- 1 tbsp fresh ,chopped or 1/2 tablespoon dried mint
- 2 tbsp lemon juice
- Combine zucchini,onion,flour,eggs ,herbs, dald and pepper to taste in bowl.
- Shallow-fry by making flat little cakes (similar to potato cakes) in hot oil until lightly browned underneath.Turn fritter cook until well browned on other side.
- Take out of pan and drain.
- Yogurt Dip, mix all ingredients in a mixing bowl until well combined.
- Serve tzatziki with fritters .
- makes 16 small fritters
