Szechuan Shrimp Recipe
- 1 teaspoon chopped garlic
- 1/4 teaspoon red pepper
- 3 tbsp. vegetable oil
- 1 1/2 teaspoon chopped fresh ginger or possibly 1/4 teaspoon grnd ginger
- 4 green onions, sliced diagonally into 1 inch pcs
- 1 pound fresh lg. shrimp, shelled and deveined
- 1 med. red pepper, in thin strips
- 3 c. warm cooked rice
- 1/3 c. teriyaki sauce
- 3 tbsp. orange marmalade
- Mix garlic and pepper flakes in oil in microwave in 9 inch skillet; microcook uncovered on high 1 minute.
- Stir in remaining ingredients except shrimp and rice.
- Dipping shrimp in sauce, place in circle on top, thicker parts to outside.
- Microcook on high 3-4 min till shrimp are cooked, rotating dish once.
- Serve over rice.
- Makes 4 servings.
