Kentucky Pork Chops

  1. Place pork chips in large dish.
  2. Combine 2 tablespoons mustard, 2 tablespoons molasses, 2 tablespoons bourbon, if used, or orange juice, 1/8 teaspoon hot pepper sauce and orange rind.
  3. Mix well. Add yams to the chops.
  4. Pour mustard mixture over.
  5. Cover and marinate at room temperature at least 30 minutes.
  6. Remove meat and yams from marinade, scraping off most of it.
  7. Grill, covered, over preheated coals or 4-inches from broiler, turning once, about 6 minutes on each side for the meat, 8 to 10 minutes each side for the yams, until cooked through.
  8. Pork should be white, but still moist when cut.
  9. Yams should be browned and soft.
