Kentucky Pork Chops
- 4 loin pork chops (1-inch thick; 1 1/2 lb.)
- 4 Tbsp. Dijon-style mustard
- 4 Tbsp. dark molasses
- 4 Tbsp. bourbon or orange juice
- 1/4 tsp. hot pepper sauce
- 1/4 tsp. grated fresh orange rind
- 1/2 lb. yams, peeled and cut into slices
- 1/3 c. fresh lime juice
- 2 Tbsp. minced shallots or green onions
- 1 Tbsp. minced fresh parsley
- 1/2 tsp. salt
- 1/2 tsp. coarsely cracked black pepper
- 1/2 c. peanut oil
- 1 head chicory, in bite sized pieces
- red cabbage, shredded
- 1 tart apple, cored and cut into wedges
- Place pork chips in large dish.
- Combine 2 tablespoons mustard, 2 tablespoons molasses, 2 tablespoons bourbon, if used, or orange juice, 1/8 teaspoon hot pepper sauce and orange rind.
- Mix well. Add yams to the chops.
- Pour mustard mixture over.
- Cover and marinate at room temperature at least 30 minutes.
- Remove meat and yams from marinade, scraping off most of it.
- Grill, covered, over preheated coals or 4-inches from broiler, turning once, about 6 minutes on each side for the meat, 8 to 10 minutes each side for the yams, until cooked through.
- Pork should be white, but still moist when cut.
- Yams should be browned and soft.
