Quark with Honeyed Apples and Raisin Bread

  1. In a 10-inch saute pan, melt butter over medium-high heat.
  2. Add apple slices, honey, and 2 sprigs thyme (if using).
  3. Cook, stirring often, until apples have softened and browned, 6 to 8 minutes.
  4. (Take special care not to burn the honey.)
  5. Toast bread, and spread each slice with 1 to 2 tablespoons quark.
  6. Top with cooked apples, divided evenly among the slices; drizzle with more honey and garnish with remaining thyme sprigs.
