Smoked Trout in Ranch-Cucumber Cups

• 2 English cucumbers
• 170 g smoked trout, flaked
• 1/3 cup Renee's Classic Ranch Dressing
• 2 Tbsp. chopped fresh chives, divided

1. Cut each cucumber crosswise into 9 pieces.
2. Use melon baller to scoop out centre of each piece.
3. Combine fish, dressing and 1 Tbsp.
4. chives; spoon into cucumber cups.
5. Sprinkle with remaining chives.
