Barbecue Meatballs and Vegetables
- 1/2 cup MIRACLE WHIP Dressing Family Dollar $3.50 thru 02/07
- 1/2 cup KRAFT Original Barbecue Sauce
- 1/4 cup honey
- 1 Tbsp. chili powder, divided
- 1 tsp. ground black pepper, divided
- 1 tsp. ground red pepper (cayenne), divided
- 1 tsp. salt, divided
- 1 lb. ground beef Safeway 1 lb For $3.99 thru 02/09
- 1 medium green pepper, cut into chunks
- 1 medium onion, sliced
- 1 cup sliced mushrooms
- 1 cup sliced yellow squash
- 1 cup sliced zucchini
- 1 can (8 oz.) pineapple chunks, drained
- 2 Tbsp. chopped fresh parsley
- Combine dressing, barbecue sauce, honey, 2 tsp.
- of the chili powder and 1/2 tsp.
- each of the ground black pepper, red pepper and salt.
- Set aside.
- Mix meat, remaining 1 tsp.
- chili powder and remaining 1/2 tsp.
- each of the black pepper, red pepper and salt.
- Shape into 12 meatballs.
- Brown meatballs in large skillet on medium-high heat; drain.
- Set aside.
- In same skillet, cook and stir green pepper, onion, mushrooms, squash, zucchini and pineapple on medium heat 5 minutes.
- Reduce heat to low.
- Stir in reserved dressing mixture and the meatballs; cover.
- Simmer 15 minutes, stirring occasionally.
- Stir in parsley.
