Italian Sausage Pasta Soup
- 1/2 lb. hot or sweet Italian sausage links
- 1 (28 oz.) can whole tomatoes (undrained), chopped
- 1 (14 1/2 oz.) can chicken broth
- 1 (8 oz.) can tomato sauce
- 1 tsp. dried basil leaves
- 1 tsp. dried oregano leaves
- 1 (16 oz.) can mixed vegetables
- 2 c. rotini, cooked
- 2 Tbsp. grated Parmesan cheese
- Place sausage links in a large saucepan or 5-quart Dutch oven. Add water to a depth of about 1/2 inch; bring to a boil.
- Reduce heat, cover and simmer 10 minutes or until sausage is partially cooked; drain.
- Cut sausage into slices.
- Return to saucepan.
- Add tomatoes, chicken broth, tomato sauce, basil and oregano; blend well.
- Bring to a boil; reduce heat, cover and simmer 20 minutes, stirring occasionally.
- Stir in vegetables and pasta.
- Cover; bring to a boil.
- Reduce heat; simmer 3 to 5 minutes or until vegetables are crisp-tender. Garnish with Parmesan cheese.
- Serves 6.
