Meatball Oven Dinner
- 1 lb. ground beef
- 2 Tbsp. chopped onion
- 1 Tbsp. chopped bell pepper
- 1/4 c. corn meal
- 1 tsp. salt
- 1 1/2 tsp. dry mustard
- 1 tsp. chili powder
- 1/2 c. milk
- 1 egg, beaten
- 1/4 c. flour
- 2 Tbsp. oil
- 3 c. tomato juice
- 3 potatoes, quartered
- 6 carrots, halved
- 12 small onions
- Combine meat, onion, bell pepper, meal, seasonings, milk and egg.
- Form into 12 meat balls.
- Sprinkle with flour; brown in hot oil.
- Place in large casserole.
- To oil in skillet, add remaining flour; blend and add tomato juice.
- Cook until medium thick; pour over meat balls.
- Arrange vegetables around meat balls.
- Sprinkle with salt; cover.
- Bake 2 hours in 350u0b0 oven.
