Miso Soup with Kayanoya Dashi
- 400 ml water
- 1 bag Kayanoya Dashi
- 1 1/2 to 2 Tablespoons miso
- In 400ml of cold water in a pot, put 1 bag of Kayanoya dashi.
- (Do not add a dashi bag after you boil the water!
- This is different from how you'd use powdered dashi.)
- Turn the heat and bring it to boil.
- Boil for a minute or two.
- Remove the dashi bag.
- Add and cook whatever veggies, tofu, mushrooms or seaweed that you'd like in your miso soup.
- (The picture shown is deep-fried tofu "abura-age.")
- Lower the heat, stir in 1.5 - 2 Table spoons of miso (start with 1.5 and add more if you prefer), and simmer for a few minutes.
- Bon appetite!
- FYI: The picture shown is a low-sodium Kayanoya Dashi packet.
- You can purchase them at Nijiya Market in Hawaii.
