Miso Soup with Kayanoya Dashi

  1. In 400ml of cold water in a pot, put 1 bag of Kayanoya dashi.
  2. (Do not add a dashi bag after you boil the water!
  3. This is different from how you'd use powdered dashi.)
  4. Turn the heat and bring it to boil.
  5. Boil for a minute or two.
  6. Remove the dashi bag.
  7. Add and cook whatever veggies, tofu, mushrooms or seaweed that you'd like in your miso soup.
  8. (The picture shown is deep-fried tofu "abura-age.")
  9. Lower the heat, stir in 1.5 - 2 Table spoons of miso (start with 1.5 and add more if you prefer), and simmer for a few minutes.
  10. Bon appetite!
  11. FYI: The picture shown is a low-sodium Kayanoya Dashi packet.
  12. You can purchase them at Nijiya Market in Hawaii.
