Mushroom and Sweet Potato Frittata

  1. Heat oven to 350 degrees F.
  2. Cook potatoes in boiling water 3 min.
  3. ; drain.
  4. Set aside.
  5. Heat dressing in large ovenproof skillet on medium heat.
  6. Add onions and mushrooms; cook and stir 5 min.
  7. or until tender.
  8. Stir in potatoes.
  9. Whisk eggs and pepper in medium bowl; stir in Parmesan and half the shredded cheese blend.
  10. Pour over vegetables.
  11. Top with remaining cheese.
  12. Bake 20 to 25 min.
  13. or until knife inserted in center comes out clean.
