Pumpkin-Cream Cheese Stuffed Celery Sticks
- 4 sticks Fresh Celery (I Use Celery Hearts)
- 4 ounces, weight Cream Cheese
- 2 Tablespoons Pumpkin Pie Filling
- Rinse celery and dry on paper towels, trim ends, cut in thirds and place on a plate.
- In a mixing bowl, add cream cheese and pumpkin pie filling and use a handheld mixer on low to combine.
- Fill each third of celery cavity with mixture using a butter knife or small offset spatula.
- Repeat with remaining ingredients.
- Cover plate with plastic wrap and refrigerate until ready to serve.
