Low Fat Cranberry Squares

  1. Preheat oven to 350F (180C).
  2. Line 13x9 inch pan with foil; spray with nonstick spray.
  3. Combine cranberrries with sugar, flour, cornstarch, baking powder, baking soda and salt.
  4. Mix well and make well in center.
  5. Add buttermilk, egg whites and orange peel; stir until smooth.
  6. Fold in berries; spread in prepared foil-lined pan.
  7. Bake 20 to 25 min.
  8. Cool in pan for 5 minutes, cut into 12 squares.
