Low Fat Cranberry Squares
- 1 cup cranberries washed, halved
- 1 1/4 cup sugar
- 1 cup flour, all-purpose
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 23 cups buttermilk
- 2 each egg whites lightly beaten
- 1 teaspoon orange zest
- Preheat oven to 350F (180C).
- Line 13x9 inch pan with foil; spray with nonstick spray.
- Combine cranberrries with sugar, flour, cornstarch, baking powder, baking soda and salt.
- Mix well and make well in center.
- Add buttermilk, egg whites and orange peel; stir until smooth.
- Fold in berries; spread in prepared foil-lined pan.
- Bake 20 to 25 min.
- Cool in pan for 5 minutes, cut into 12 squares.
