Tomato Juice Cocktail Recipe

  1. Wash tomatoes and remove stems and cores if present.
  2. Cut up tomatoes.
  3. Measure 19 c..
  4. In 8 to 10 qt kettle, combine tomatoes, celery, and onion.
  5. Cover and cook slowly till tomatoes are soft, about 15 min.
  6. Stir often.
  7. Press tomatoes through food mill to extract juice.
  8. Measure 12 c..
  9. Boil juice gently, uncovered, about 30 min, stirring often.
  10. Measure 9 1/2 to 10 c. juice.
  11. Add in rest of ingredients and simmer 10 min.
  12. Pour warm juice into warm jars, leaving 1/2 inch head space.
  13. Adjust lids.
  14. Process in boiling water bath (pints) 10 min.
  15. Makes 5 pints.
