Fruit Juice Tapioca Pudding

  1. Mix all ingredients in medium saucepan.
  2. Let stand 5 minutes.
  3. Cook on medium heat, stirring constantly, until mixture comes to full boil.
  4. (Pudding thickens as it cools.)
  5. Remove from heat.
  6. Cool 20 minutes; stir.
  7. Stir before serving.
  8. Serve warm or chilled.
  9. Variation: Grape juice, pineapple juice, orange juice, grapefruit juice, cranberry juice, juice blends or mango nectar can be substituted for apple juice.
