Fruit Juice Tapioca Pudding
- 1/3 cup sugar
- 3 Tbsp. MINUTE Tapioca
- Dash salt
- 2 cups apple juice
- Mix all ingredients in medium saucepan.
- Let stand 5 minutes.
- Cook on medium heat, stirring constantly, until mixture comes to full boil.
- (Pudding thickens as it cools.)
- Remove from heat.
- Cool 20 minutes; stir.
- Stir before serving.
- Serve warm or chilled.
- Variation: Grape juice, pineapple juice, orange juice, grapefruit juice, cranberry juice, juice blends or mango nectar can be substituted for apple juice.
