Coriander Pork Roast
- 2 lb boneless pork roast
- 1 cup roasted habanero salsa
- 1 tbsp ground coriander
- 2 tsp garlic powder
- 2 tsp dried minced onions
- 1 1/2 tsp ground cumin
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp ground celery seed
- 1 large pinch kosher salt and black pepper
- 1 vegetable oil; as needed
- Cover pork loin with enough oil to coat.
- Season.
- Roast at 300 for approximately 1 hour or until pork reaches desired doneness.
- Pour salsa over roast during last 5 minutes of cooking.
