Chow-Chow

  1. Combine vegetables and mix with salt.
  2. Cover; let stand overnight and drain.
  3. Mix mustard with a little vinegar in kettle. Add remaining vinegar, sugar and spices.
  4. Simmer 20 minutes. Add vegetables and simmer 10 minutes.
  5. Continue simmering while packing one hot sterilized jar at a time.
  6. Fill to within 1/8-inch from jar top.
  7. Make sure liquid covers vegetables.
  8. Seal each jar at once.
  9. Process in boiling water bath (212u0b0F) for 5 minutes. Makes 6 to 8 pints.
  10. Use relish within 6 months.
