Chow-Chow
- 6 medium onions, chopped
- 6 green peppers, chopped
- 6 sweet red peppers, chopped
- 1/4 c. pickling salt
- 1 tsp. turmeric
- 1 tsp. ginger
- 1 Tbsp. celery seed
- 1 medium (2 qt.) chopped cabbage
- 1 qt. chopped green tomatoes
- 2 Tbsp. prepared mustard
- 6 c. vinegar
- 2 1/2 c. sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. mixed whole pickling spices
- Combine vegetables and mix with salt.
- Cover; let stand overnight and drain.
- Mix mustard with a little vinegar in kettle. Add remaining vinegar, sugar and spices.
- Simmer 20 minutes. Add vegetables and simmer 10 minutes.
- Continue simmering while packing one hot sterilized jar at a time.
- Fill to within 1/8-inch from jar top.
- Make sure liquid covers vegetables.
- Seal each jar at once.
- Process in boiling water bath (212u0b0F) for 5 minutes. Makes 6 to 8 pints.
- Use relish within 6 months.
