Watermelon and Tomato Salad
- 6 cup watermelon cut in 1" cubes
- 3 cup tomatoes cut into bites sized slices
- 1/4 cup crumbled feta
- 2 tbsp cider or white vinegar
- 1 1/2 tbsp sugar
- 2 pinch cayenne
- 1/4 medium red onion
- 2 tbsp olive oil
- 1/2 cup fresh mint OR fresh basil
- In a small bowl combine vinegar, sugar, and cayenne.
- Then add onion.
- Allow to set for 30 minutes.
- Cut up watermelon and tomato.
- Combine in a large bowl.
- Add feta and vinegar + onion mixture.
- Sprinkle fresh herb over the top then drizzle with olive oil.
- Toss to combine.
