Potato Quesadilla
- 5 whole Medium Boiled Potatoes, Peeled And Shredded
- 1 teaspoon Ginger, grated
- 1/2 cups Fresh Coriander Or Cilantro, Coarsely Chopped (optional)
- 1/4 cups Shredded Cheese (I Use A 3-cheese Mix, Or Use Your Favorite)
- 1 teaspoon Salt, Or To Taste
- 1/4 teaspoons Ground Black Pepper
- 8 whole Tortillas (or Roti)
- 3 Tablespoons Olive Oil, Or Flavorless Oil Of Choice
- In a large bowl, mix together shredded potatoes, ginger, coriander, cheese, salt and pepper.
- Take 1 tortilla and lay it on a flat surface.
- Add 2 tablespoons of the potato mixture and spread it evenly on the tortilla.
- Cover the filled tortilla with another tortilla and press the edges to seal it.
- Heat a non-stick pan on high for 2 minutes and then reduce the flame to medium.
- Place the potato stuffed tortilla into the pan, with 1/2 teaspoon of oil in the pan.
- Spread another 1/2 teaspoon of oil evenly on the side facing up.
- Let it cook for 2 minutes.
- Now, flip the tortilla to the other side.
- Cook for 2 minutes or until browned to your liking.
- Transfer the quesadilla to a serving dish and repeat assembling and cooking the rest.
- Serve hot.
