Potato Quesadilla

  1. In a large bowl, mix together shredded potatoes, ginger, coriander, cheese, salt and pepper.
  2. Take 1 tortilla and lay it on a flat surface.
  3. Add 2 tablespoons of the potato mixture and spread it evenly on the tortilla.
  4. Cover the filled tortilla with another tortilla and press the edges to seal it.
  5. Heat a non-stick pan on high for 2 minutes and then reduce the flame to medium.
  6. Place the potato stuffed tortilla into the pan, with 1/2 teaspoon of oil in the pan.
  7. Spread another 1/2 teaspoon of oil evenly on the side facing up.
  8. Let it cook for 2 minutes.
  9. Now, flip the tortilla to the other side.
  10. Cook for 2 minutes or until browned to your liking.
  11. Transfer the quesadilla to a serving dish and repeat assembling and cooking the rest.
  12. Serve hot.
