Red Beet Eggs

  1. Mix sugar, salt, cider vinegar, water, 1 cup beet juice, mixed pickling spice, and heat and let simmer for 15 minutes.
  2. Add red beets into mixture.
  3. Pour over hard boiled, peeled eggs.
  4. Refrigerate overnight.
  5. Slice in half before serving.
