Sesame Potato Latkes Recipe

  1. Peel potatoes and mash till smooth.
  2. Add in garlic, 1 Tbsp.
  3. oil, chives and bread crumbs.
  4. Season to taste with salt and pepper.
  5. Mix well.
  6. Shape into thin latkes, using about 2 Tbsp.
  7. batter per latke.
  8. Pour about 1/3 c. sesame seeds onto flat plate and press both sides of latkes into seeds to coat.
  9. In large, heavy skillet, heat 1/4 inch oil to 375 degrees.
  10. Carefully plate latkes in warm oil and fry on both sides till golden, about 2 to 3 min per side.
  11. Drain on paper towels.
  12. Serve immediately with Caramelized Applesauce.
  13. Yields 2 to 3 dozen latkes.
