Sesame Potato Latkes Recipe
- 2 lg. unpeeled potatoes, boiled
- 1 clove garlic, peeled and chopped
- Oil
- 1 teaspoon chopped chives
- 2 tbsp. bread crumbs
- Salt and pepper
- Sesame seeds
- Caramelized Applesauce (see recipe)
- Peel potatoes and mash till smooth.
- Add in garlic, 1 Tbsp.
- oil, chives and bread crumbs.
- Season to taste with salt and pepper.
- Mix well.
- Shape into thin latkes, using about 2 Tbsp.
- batter per latke.
- Pour about 1/3 c. sesame seeds onto flat plate and press both sides of latkes into seeds to coat.
- In large, heavy skillet, heat 1/4 inch oil to 375 degrees.
- Carefully plate latkes in warm oil and fry on both sides till golden, about 2 to 3 min per side.
- Drain on paper towels.
- Serve immediately with Caramelized Applesauce.
- Yields 2 to 3 dozen latkes.
