Truly Low Carb Cheesecake

  1. Preheat oven to 375 degrees.
  2. Prepare a 9" square pan by lining it with wax paper.
  3. In a medium bowl beat the cream cheese, granulated sweetener and vanilla until completely smooth.
  4. Add in egg and mix lightly - just until combined.
  5. Add in sour cream and mix lightly - also just until combined.
  6. Pour into prepared pan and bake for 25-30 minutes.
  7. Refrigerate overnight.
  8. Slice into nine squares and serve with or without your choice of topping!
