Vegetable Medley Paella

  1. Heat oil in large skillet over high heat.
  2. Add sausages; cook 4 minutes, or until golden brown.
  3. Add onion, garlic, paprika, and Italian seasoning; saute 2 minutes, until onion softens.
  4. Add vegetables and roasted peppers, and cook 2 minutes, or until vegetables begin to thaw.
  5. Stir in rice.
  6. Add wine and 1 1/4 cups water.
  7. Bring to a boil; reduce heat to medium.
  8. Cover, and cook 10 minutes, or until liquid is absorbed and rice is tender.
  9. Season with salt and pepper, and serve.
