Snowy Apricot Bars Recipe

  1. Place apricots in 2 qt saucepan; add in sufficient water to cover.
  2. Simmer uncovered 10 min; drain.
  3. Cold; chop and reserve.
  4. Heat oven to 350 degrees.
  5. Cut butter into granulated sugar and 2 1/2 c. baking mix till crumbly.
  6. Pat in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
  7. Bake 10 min.
  8. Beat brown sugar and Large eggs.
  9. Stir in apricots, 2/3 c. baking mix, the vanilla and nuts.
  10. Spread over baked layer.
  11. Bake 30 min longer; cold completely.
  12. Cut into bars about 2 inch x 1 inch.
  13. Roll in powdered sugar.
  14. 75 cookies.
