Snowy Apricot Bars Recipe
- 1 pkg. (6 ounce.) dry apricots (1 1/3 c.)
- 1/2 c. hard butter
- 1/2 c. granulated sugar
- 2 1/2 c. Bisquick baking mix
- 2 c. packed brown sugar
- 4 Large eggs, beaten
- 2/3 c. Bisquick baking mix
- 1 teaspoon vanilla
- 1 c. minced nuts
- Powdered sugar
- Place apricots in 2 qt saucepan; add in sufficient water to cover.
- Simmer uncovered 10 min; drain.
- Cold; chop and reserve.
- Heat oven to 350 degrees.
- Cut butter into granulated sugar and 2 1/2 c. baking mix till crumbly.
- Pat in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
- Bake 10 min.
- Beat brown sugar and Large eggs.
- Stir in apricots, 2/3 c. baking mix, the vanilla and nuts.
- Spread over baked layer.
- Bake 30 min longer; cold completely.
- Cut into bars about 2 inch x 1 inch.
- Roll in powdered sugar.
- 75 cookies.
