Pecan Pie (Microwave) Recipe
- 1 (10") baked pie shell
- 1 1/4 c. brown sugar, firmly packed
- 1 c. light corn syrup
- 1/4 c. water
- 4 Large eggs, well beaten
- 1/4 c. butter, softened
- 1 teaspoon vanilla
- 1 1/2 c. pecan halves
- Mix sugar, corn syrup and water in 1 1/2 qt casserole.
- Heat on high for 3 to 3 1/2 min till mix boils.
- Boil for 2 min.
- Gradually stir warm mix boils.
- Boil for 2 min.
- Gradually stir warm mix into Large eggs.
- Stir in butter and vanilla.
- Pour in pie shell, top with pecan halves.
- Cook on Medium High 7 to 8 min till filling is set.
