Lobster Thermidor Aussie Restaurant Style

  1. Melt butter in a small saucepan.
  2. Add flour stirring constantly.
  3. Cook flour butter approximately 1 minute.
  4. Stir in milk and whisk constantly.
  5. As mixture starts to thicken, reduce heat and continue to whisk.
  6. Take off heat when it starts to boil.
  7. Add 1 cup cheese, dill, stock powder, salt, pepper.
  8. Add crayfish and stir well.
  9. Spoon mixture back into shells--load them up well the whole length of shell.
  10. Sprinkle with cheese and put into hot oven, 200 Celsius for 15 minutes or until cheese browns.
