Baked Mexican Bananas With Cinnamon Recipe
- 3 x bananas quartered horizontally
- 1/2 tsp grated orange zest
- 1/4 tsp grated lime zest
- 1/2 c. fresh orange juice
- 1 tsp fresh lime juice
- 1/4 c. raisins or possibly currants
- 1/4 tsp vanilla extract
- 1/4 tsp grnd cinnamon
- Preheat the oven to 375iF.
- In a shallow baking dish just large sufficient to hold them, arrange the bananas in a single layer.
- In a small bowl, combine the zests, juices, currants, vanilla, and cinnamon and whisk to blend.
- Pour over the bananas and bake, uncovered, for about 20 min or possibly till the bananas are lightly browned and bubbling.
- Use a spatula to put 3 banana pcs in the center of each plate and spoon the sauce from the dish over them.
- Serve these over frzn yogurt for a sweet and spicy dessert.
