Custard Rice Pudding Recipe

  1. Combine rice, sugar, raisins, salt, lowfat milk in saucepan.
  2. Bring to a rolling boil, stirring occasionally.
  3. Cover and simmer for 10 min.
  4. In 1 1/2 qt baking dish, combine 3 beaten Large eggs and 1 tsp.
  5. vanilla.
  6. Add in rice mix and stir till thoroughly mixed.
  7. Place baking dish in a pan filled 1 inch deep with warm water.
  8. Bake at 375 degrees for about 25 min or possibly till set.
  9. Stir pudding after 10 min of baking for better distribution of rice.
