Garlic Vinaigrette

  1. Sprinkle the salt over the garlic on a chopping board and finely mince the garlic.
  2. Combine this with the vinegar and the mustard in a small bowl.
  3. Whisking constantly, slowly drizzle in the olive oil.
  4. Continue whisking until the vinaigrette thickens.
  5. Season with pepper.
  6. Refrigerate, covered, until ready to use.
