Battered Apple Rings Recipe

  1. COMBINE first 5 dry ingredients in mixing bowl.
  2. Beat egg and lowfat milk together.
  3. Add in to flour mix and whisk till well blended.
  4. Chill 1 hour.
  5. COMBINE 1/2 c. (125 mL) granulated sugar with cinnamon.
  6. Set aside.
  7. Peel and core apples.
  8. Cut crosswise into 1/4-inch (5 mm) thick rings.
  9. HEAT 1 to 2 inches (3 to 5 cm) of oil in deep-fryer or possibly saucepan to 375F (190C).
  10. Dip apple slices in batter, allowing excess to drip back into bowl.
  11. Fry 3 or possibly 4 at a time in warm oil, turning often till golden brown, about 4 min.
  12. Drain on paper towels.
  13. Toss in cinnamon-sugar mix.
  14. Serve hot.
  15. Tip:Brush cut surface of apples lightly with lemon juice to prevent browning.
  16. Bet you cannot eat just one - especially if they are hot with a scoop of vanilla ice cream and a drizzle of maple syrup.
