T and T Famous Chicken Curry
- 1 kg chicken (breast or thighs)
- 13 cup plain flour
- 2 tablespoons oil (rice bran is good)
- 1 brown onion
- 1 garlic clove
- 3 tablespoons keens curry powder
- 1 (440 g) can diced tomatoes
- 4 medium fresh tomatoes
- 4 chicken stock cubes, melted into cup warm water (or real packet stock)
- 4 chili (small hot little ones)
- 12 cup frozen peas
- 2 carrots, diced
- 12 cup sliced mushrooms
- Cut chicken into cubes then add flour to good simmering pot and mix to even flour through chicken.
- add oil add onion and cook to brown.
- add all ingredients into big simmering pot and bring to boil and simmer for twenty minutes with lid on then take off lid and reduce to a nice sauce for another ten minutes.
